Success!!!!!!!



Made this for dinner tonight...... Very very yummy I suggest you try it out!

Pan-Seared Salmon with Rice and Spicy Broccoli (+Cauliflower)

2-3 4. oz salmon fillets
1 Tbs. lite soy sauce ( or regular if you like it extra salty)
1 Tsp. fresh or powdered garlic
1 Tsp. ground ginger
1 Tbs. olive oil
1 Tsp. honey (any kind is fine)
1/2 Tsp. ground dried paprika
Salt and pepper
*Combine all ingredients in a resealable plastic bag. Squish it around to mix the marinade up. Place the salmon in the bag and let it marinade for an hour or two. Pour some olive oil in a skillet and heat it up on medium for a minute or two. Sear the salmon on the first side for 4-5 minutes. Flip it over and cook the other side.

Brown Rice

1 Cup long grain brown rice ( I prefer brown but use whatever you like)
1 3/4 cup water or and kind of stock you like
*Bring the water and rice to a boil with the lid off. Once it is boiling place the lid on and turn it down to a simmer for about 20 mins. After 20 mins turn the heat off and let the rice sit for about 10-15 more minutes. Make sure you leave the lid on for this last 10-15 minutes!! No peaking:)
Spicy Broccoli and Cauliflower ( I had cauliflower on hand so I added it in)

1/2 Head broccoli
1/2 Head cauliflower
1 Tbs. red pepper flakes
juice of 1/2 a lemon
1 Tbs. olive oil
Salt and pepper to taste
* Bring the water to a boil. Throw the broccoli and cauliflower florets into the water for 3-4 minutes. After this I threw it in some ice water to keep the colors and texture good. Drain it and toss it into a bowl. Pour the tablespoon of olive oil ( use the good stuff its worth it), sprinkle with salt, pepper, and red pepper flakes and mix it all up to distribute the spices. Douse it with the lemon juice and Voila! fantastic and easy side dish.

I paired it with a nice glass of boxed chardonnay out of a plastic martini glass (I know classy right). Fantastic night.
